Watermelon Cucumber Salad

Servings 4 servings


  • 1/4 cup olive oil
  • 1/8 cup red wine vinegar or balsamic
  • 2 tablespoons chopped fresh mint or cilantro
  • 1/4 teaspoon crushed red pepper flakes
  • 5 cups cubed seedless watermelon from 5-lb watermelon
  • 2 cups seeded and sliced cucumbers
  • 1/4 cup thinly sliced red onion
  • Optional: 1/3 cup crumbled feta cheese.
  • Salt and pepper to taste


  • In one bowl, mix olive oil, vinegar, mint, red pepper flakes, and salt/pepper seasoning.
  • In another bowl, combine watermelon, cucumbers, and onions. Add optional feta.
  • Pour dressing over fruit and vegetables and toss to coat.
  • Taste and add more salt if needed.
  • Chill in the refrigerator for at least 1 hour.
