Nebraska Apple Cake

Servings 12 servings


  • 2 cups sugar
  • 1 cup vegetable oil
  • 1 teaspoon orange extract
  • 2 eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 3 cups peeled cored, and shredded Granny Smith apples
  • 1 cup chopped black or English walnuts
  • 1 cup butterscotch chips


  • Preheat oven to 350°F. Grease a 13x9-inch baking pan.
  • In a bowl, mix together sugar, oil, extract, and eggs.
  • In another bowl, sift together flour, baking soda, baking powder, salt, and cinnamon.
  • Add dry ingredients to egg mixture. Stir well. Stir in apples. Add walnuts. Mix thoroughly.
  • Pour batter into prepared pan. Sprinkle butterscotch chips on top. Bake for 1 hour, or until a tester inserted into the center comes out clean.
