Cowboy Frito Pie

Get back in the dinner saddle again with this twist on a delicious taste. Cowboy Frito Pie will lasso in your taste buds and won't let them go! The forever-loved and crunchy corn chips are in every bite of this perfectly seasoned ground beef, bean, and cheese roundup of great Tex-Mex flavors.   • 1 pound ground beef
  • 1 medium white onion chopped
  • 2 15-ounce cans Ranch Style┬« beans
  • 1 9.3-ounce package corn chips, divided
  • 2 10-ounce cans enchilada sauce
  • 2 cups cheddar cheese shredded
  • green onions to taste, thinly sliced, for garnish


  • Preheat the oven to 350 degrees F.
  • Grease a 9x13-inch baking dish.
  • In a large skillet over medium-high heat, add the beef and the white onion and cook, while crumbling the meat, until the beef is no longer pink, about 5-7 minutes. Drain the excess grease.
  • Reduce the heat to medium. Add the beans to the beef mixture and cook, stirring frequently, until they are heated through.
  • Reserve 1 cup of corn chips.
  • Add the remaining corn chips to the bottom of the prepared baking dish.
  • Pour the beef mixture over the corn chip layer.
  • Pour the enchilada sauce over the beef layer and sprinkle with the cheese and the reserved 1 cup of corn chips.
  • Bake the pie until the cheese has melted, about 15-20 minutes.
  • Serve the pie garnished with the green onions.
